Day 7 - Pumpkin Walnut Pancakes

         
             Pumpkin Walnut Pancakes


1 cup flour
1 cup grated raw pumpkin, cooked in 
   microwave for 3 min., then mashed
2 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 large egg
3/4 cup milk
2 Tbsp oil, melted
1/2 cup chopped pecans


Heat a lightly oiled frying pan over medium
high heat. 
In large bowl, sift together flour, baking
powder, salt, sugar, and cinnamon. 
In a separate bowl, combine pumpkin, 
egg, oil, and milk. Add dry ingredients 
to the wet and mix well. Fold in chopped
pecans.
Pour or scoop the batter onto the frying
pan using approximately 1/4 cup for
each pancake, or more for larger pancakes.
Lightly brown on both sides, and serve hot
with butter, drizzled with 100% Pure Maple
Syrup. May add more pecans to top, as
desired. Treat your family on a special day
with this breakfast!!! WARNING-you may
have to go back to bed for a second nap
after this one...or just plan on some serious
relaxation!!!
